The Role

You’ll take full ownership of the beverage department — standards, people, profit, and performance.

What you’ll be responsible for:

• Leading day-to-day beverage operations with discipline and attention to detail

• Recruiting, training, and developing a high-performing bar team

• Designing seasonal cocktail and wine programs that balance creativity with profitability

• Managing inventory with precision — tight stock control, minimal waste, zero complacency

• Driving cost control, margin optimisation, and smart pricing strategies

• Analysing sales performance and reporting accurately on results

• Ensuring full compliance with licensing, safety, and operational standards

• Maintaining a polished, organised bar that reflects the calibre of the venue

• Setting the tone for professional, consistent, old-school hospitality
