About the Position

The Chef is responsible for the day-to-day running of the kitchen. This covers preparing and cooking the restaurant's Indian menu to a consistent standard across dine-in, takeaway and delivery service. The role plans and prepares dishes, prices menu items, controls stock and food costs, and supervises kitchen staff during service. It also keeps the kitchen compliant with food safety and workplace health and safety requirements. Every order leaving the pass reflects the restaurant's standards, so the Chef is central to guest satisfaction, kitchen efficiency and the restaurant's ongoing reputation.

Key Responsibilities

  • Plan menus and develop dishes in consultation with management, including daily specials and seasonal variations of the Indian menu.
  • Estimate food and ingredient requirements, prepare costings and price menu items to maintain profitability.
  • Order, receive and inspect stock and ingredients; monitor quality and maintain correct storage and stock rotation.
  • Prepare spice blends, marinades, sauces and curry bases using traditional Indian cooking methods.
  • Prepare, season and cook curries, rice dishes, breads, starters and accompaniments to recipe and presentation standards.
  • Coordinate kitchen workflow during service so dine-in, takeaway and delivery orders are completed accurately and on time.
  • Supervise, train and direct kitchen staff, and allocate duties and rosters to meet service demand.
  • Accommodate guests' dietary requirements and allergen requests, explaining menu items and ingredients to front-of-house staff and customers when needed.
  • Monitor food quality during preparation and before service, and taste and adjust dishes to keep them consistent.
  • Maintain food safety and hygiene standards, including temperature monitoring, cleaning schedules, labelling and record keeping in line with WA food safety requirements.
  • Ensure the safe use, cleaning and maintenance of kitchen equipment, and report faults or hazards promptly.
  • Minimise food wastage and control kitchen costs through portion control, accurate preparation and stock management.

Requirements

  • Australian citizens and permanent residents are encouraged to apply.
  • Certificate IV in Kitchen Management and Diploma of Hospitality Management.
  • Minimum 1 year of experience as a Chef.
  • Sound knowledge of Indian cooking techniques, spices and menu preparation.
  • Working knowledge of food safety, hygiene and allergen management requirements.
  • Ability to manage stock control, ordering, food costing and portion control.
  • Strong organisational and time-management skills, with the ability to perform in a high-volume, fast-paced kitchen.
  • Leadership skills to supervise, train and motivate kitchen staff.
  • Clear communication skills and a strong team focus with front-of-house staff.
  • Availability to work a roster including evenings, weekends and public holidays.
